Mango chutney has always been very popular in Pakistan and India. In fact, there are so many varieties of mango based chutneys invloving different ingredients, and this one is rather simple but not less tasty than those of richer content! The easiness of this recipe makes it also perfect for those making chutney for the first time.
Who is not well familiar with chutneys yet, they are thick, juicy and spicy mixtures of chopped fruits and vegetables accompanying a main dish. A little bit of citrus juice or vinegar are used as preservatives.
HOMEMADE MANGO CHUTNEY
Ingredients:
- 1-2 middle sized ripe mangos
- 1\2 tsp sugar
- 1\2 tsp lime juice
- 3 large dates (pitted)
- 1\2 tsp cumin (zeera) seeds
- 1\4 tsp coriander seeds
- salt to taste
- 1 tsp vegetable oil
- Peel the mangos and cut them into small bars.
- Fry the mangos in oil till they become mushy.
- Set aside to cool for a while and then mash them in a blender.
- Add the rest of the ingredients to the mango mixture - now it should look like a smooth paste.
- Put in a glass jar or other air-tight container and store in a fridge - chutney will be fresh for over a week.

I have never tasted home-made mango chutney. My friend always talked about it, but served me the readily-made still!
